Tomatoes and oregano make it Italian; wine and tarragon make it French. Sour cream makes it Russian; lemon and cinnamon make it Greek. Soy sauce makes it Chinese; garlic makes it good.

Greek Inspired Salad
Arrange lettuce, cucumbers, tomatoes and onion on plate. Place a choice of fish on top - I used fresh anchovies in true Greek style.
Make your dressing. I used 3 parts good quality olive oil to 1 part lemon juice and a tsp of French mustard whisked well with a dash of warm water to emulsify.
Dress salad and season with sea salt, freshly ground black pepper and oregano.
